Cooking Salmon perfectly with the Sony NEX-7, Using Stan’s stuff seasonings

3.31.2012

Here is a video and photo of a baked salmon dish I made today. The point of the video is to test out the new Sony NEX-7 camera. This is new mirrorless aps-c sensor camera with interchangeable lense. At 24 megapixel and full HD in a small body you can carry around with you. Here I am shooting at iso 800, 18-55 kit lens. As you can see it looks pretty darn good.

The still was shot with out flash and cropped down from 24MP.

Now for the food part.

Since I’m so A.D.D. I find it hard to keep on task especially when I”m cooking. It’s either under cooked or over cooked. So for me to get edible food I have to use a timer with a temperature sensor.

First I season the salmon with Stan’s Stuff seasoning. Stan’s is made right here in the Florida panhandle. If you have not used it, it is an excellent all around spice. I have a cupboard full of seasonings and this is the one I use 90% of the time for fish, chicken, steak and veggies. It pretty much replaces my salt and pepper for cooking.

  • I preheat the oven to 350 degrees on baked.
  • I heat the pan on high with some olive oil.
  • I then sear the fish on both side from 30 to 45 seconds.
  • After putting the temperature sensor into the thickest part of the fish I stick it in the oven.
  • Once the core temperature of the fish reaches 130 degrees it’s perfectly done.
  • I take it out of the oven and let it rest for 5 to 10 minute so all the goodies stay inside.

I do the same with chicken breast. It is perfectly cooked at 160 degrees.

The new 2012 Canon 5d Mark III, test video from the demo day

This video was shot at the demo day last week. I tried to get the stills images but since it was shot in raw and it’s a pre release model I could not find a raw file reader to get them to read on my computer.. Arggh!

The video is was not an issue however. Here is sample video clip shop on the 5d Mark 3 at 1250 ISO very very impressive! The lens was 35mm 1.8 if I can recall.

With it’s new and improved full frame sensor/software upgrades etc it was superb in the low light. Even the horizontal jiggle was improved.(will show that in another video soon)

With built in audio controls(no hacks needed) along with audio monitoring head phone jacks this camera will make the video guys very very happy.

The Youtube version:

Bonefish on fly, so shallow it beached itself

This is a video clip of us wading for Bone fish on the rocky flats out of Long Island Bonefishing lodge at Deadman’s Cay Bahamas. I would never thought fish, especially bone fish would ever get this shallow. I am talking ankle deep and some places not even.

Shot with Nikon AW100

I shot this video of Glenn hooking up to a tailing bone fish in super skinny water. The fish eventually came off but could not move as he was stranded. It was so shallow his body was two thirds out of the water. I actually thought it was a rock sticking out of the water when I first saw it. Glenn eventually walked over and the fish spooked and swims off in inches of water.

It is one of those stories that if I didn’t have the video to prove it no one would believe me.

Board shorts made for fisherman, Mojo board shorts with pockets

I have always liked the looks of board shorts I see these surfer guys wear. The only issue I have with them was they were not very comfortable for everyday use as the fabric does not stretch. Well in recent years they have changed that and made them out of 4 way stretch fabric material.

This was great. The shorts were very comfortable, dries quickly if you get them wet and got some cool patterns from the surf industries. The only draw back, when it comes to daily use if you were not surfing was the lack of pockets. Since they were made specifically for surfing there were no need for more than one pocket really.

Mojo realized this and came out with their line of board shorts made specifically for fisherman. With plenty of pockets, 4 way stretch fabric and even a reinforced side pocket designed to hold pliers. Good progressive thinking on their part. It’s one of those concepts that gets you to think, why didn’t anyone else think of this before.

Using Foam Ant Body flies by Ashley at Don’s Bait and Tackle

Using Foam Ant Body flies by Ashley at Don’s Bait and Tackle

Hook: Gamakatsu SC15 2/0
Tail: Barred Zonker
Body: Grizzy Matuka feather and cross cut zonker in dubbing loop
Head: Foam Ant Body 3D epoxy eyes

Using these pre-cut Foam Ant Bodies is a great way to help slow the sink rate and help a fly suspend directly in front of the fish. Using these foam ant bodies helps present the fly to fish traveling high in the water column or in extremely skinny water. Either way it’s just another cool idea to add to your arsenal.

Hooking a Bonefish on fly tailing in Ankle Deep water.

I shot with a Contour helmet camera at Deadman’s Cay Bahamas.

The fish was tailing in ankle deep water over hard rocky bottom when we spotted him.

I had to make 3 cast but he ate the fly as it crossed the sand hole. Skinniest eat I have even gotten a fish to eat in. As you can see when he ran there were no deep water for him to swim into.
